Biting into an apple coffee cake muffin at Jane the Bakery is one of those little joys worth planning a morning around. The tender crumb and warm burst of apple makes everything else melt away, pulling even the busiest Bay Area customers into the moment. Realizing the buttery indulgence doesn't come from cows or plants makes the sensory slowdown even more profound.

The apple muffin follows the debut of a pair of Jane the Bakery scones made with Savor EcoButter™ earlier this summer, though our collaboration with the beloved San Francisco bakery started more than two years ago. Long before Savor made its way onto Michelin-star menus, Jane's pastry experts were testing our agriculture-free butter in a range of signature recipes. This behind-the-scenes work came into public view for the first time during last year’s San Francisco Climate Week. On a sunny April morning, Jane the Bakery and Savor co-hosted a giveaway of croissants made with Savor EcoButter™ at Jane’s Geary Street location, attracting nearly 300 Bay Area residents eager to indulge in a more sustainable kind of pastry.

“Once we nailed the lamination with the croissants, we pretty quickly had the realization that this butter could make its way into a lot more of the pastry case,” recalls Amanda Michael, owner of Jane the Bakery. “The flavor and performance are unlike other vegan butters we’ve tried and really much closer to dairy butter.”

This spring’s launch of the new pastries is a perfect illustration of what Savor was created to do: perform beautifully, taste extraordinary, and leave the planet better off. Bringing these ambitions to life in collaboration with a bakery that shares our most closely held ideals makes it all the more meaningful.

We were initially drawn to Jane the Bakery as longtime lovers of the bakery’s delicious offerings. What began as admiration for their craft evolved into a conversation about shared values, making partnership feel less like a decision and more like a natural next step. Both Savor and Jane share a conviction that what goes into food matters as much as what lands on the plate, and that the two are fundamentally inseparable.
Jane's award-winning pastries and bread are the culmination of a decade of ingredient obsession that ultimately led Amanda Michael back to her family farm. Over the last several years, the bakery established its signature Jane Grain program, which enables Amanda’s team to grow, mill, and bake in a seed-to-sandwich loop that connects the farm outside San Francisco to every baked good that comes out of the oven.
That same instinct to go back to the source and rethink what's possible is also what brought Savor into existence. Our EcoButter™ was born out of the desire to deliver the richness and performance of traditional fats, without the environmental cost of the agricultural systems behind them. We created the process that makes this possible, and the results are evident each morning as Jane the Bakery’s customers line up to indulge in the most sustainable muffin and scones on the planet.
